Blueberry Trifle Cups

blueberry pudding cupI made these in small, individual dessert cups but you could definitely do this recipe in a large trifle dish.  This is a layer dessert so I’m going to give you a few different recipes and then tell you how to layer it.

First of all, here’s your ingredient list: graham cracker crumbs, sugar, butter, all purpose flour, eggs, salt, milk, vanilla flavoring, fresh blueberries, water, sugar, lemon, cornstarch, Noosa blueberry greek yogurt

Graham Cracker Crust Recipe

1 1/2 c. graham cracker crumbs

1/3 c. sugar

6 tablespoons melted butter

Combine the above ingredients and mash into the bottom of dessert dish(es).  Bake at 375 for 5 minutes.  Let cool completely.

Vanilla Pudding Recipe

1/2 c. sugar

1/3 c. all purpose flour

dash of salt

*Blend and place in top of double boiler, then add the following…

3 egg yolks

2 c. milk

Cook, stirring constantly for 10-12 minutes or until thick like pudding.  Remove from heat and add…

1 stick butter

1/2 teaspoon vanilla flavoring

Allow to cool completely.

Blueberry Sauce Recipe

2 c. fresh blueberries

1/2 c. water

1/2 c. sugar

2 tablespoons fresh lemon juice

*Combine the above ingredients in a saucepan and bring to a boil

Mix 2 tablespoons of cornstarch with 2 tablespoons of cold water.

Slowly add to the blueberry mixture.  Stir with a metal spoon until thickened, about 5 minutes.  Then, remove from heat.  Add the following…

1/2 teaspoon vanilla

zest of 1 lemon

Layer like this:

crust, then pudding, then blueberry sauce, then yogurt, then crust, then pudding, then blueberry topping.
