Garlic Shrimp

Ingredients:
2 lbs Shrimp (Peeled, Deveined)
3 Tbsp. Butter
1/3 c. Fresh Chopped Parsley
1/2 tsp. Red Pepper Flakes
3 tsp. Minced Garlic
Juice from 2 large Lemons (about 3 1/2 Tbsp)
2 Tbsp. Capers Brine
Sea Salt
2 Tbsp Extra Virgin Olive Oil
Place large skillet over medium-high heat and add EVOO.  After oil starts moving, add minced garlic and red pepper flakes.  Stir for 1 minute and add lemon juice & capers brine.  Add salted shrimp and turn shrimp over after it starts to turn pink.  Then add butter and parsley, then simmer for 1 minute. Lower heat and cook until shrimp are done… but don’t overcook! Remove from heat and pour over pasta, rice or risotto.  Pour leftover sauce over shrimp.  Enjoy!
