I love this recipe because it’s so easy and only uses one pan!
Ingredients:
5 boneless, thin pork chops
seasoning: salt and pepper or I used “Krazy Jane’s Mixed Up Seasoning Salt”
1 tbsp. olive oil
2 c. white rice
2 cans cream of chicken soup
1 1/2 soup cans of water
chopped parsley for garnis
Heat cast iron skillet on medium high setting, then add olive oil. Season pork chops with seasoning salt. Then, sear or brown pork chops slightly – only about a minute on each side. Remove pork chops from plate. Add 2 cups of rice to bottom of skillet. In a separate mixing bowl, mix water and soup. Pour soup over the rice and stir (reserve 1/4 cup). Add pork chops to the top of rice and pour on the remaining soup. Sprinkle with parsley, to make it pretty. Bake at 375 degrees for 45 minutes.
