Today, I’m sharing my 5 favorite candy recipes.  These are all easy, they don’t require a candy thermometer and they all use the microwave.  That’s the way I roll, people.  I hope you like them.

PBballs words

Ingredients:

1 cup peanut butter

1 cup confectioner’s sugar

1 tbsp. softened butter

1 tsp. vanilla

chocolate candy coating

Mix the first 4 ingredients.  Roll into small (walnut sized) balls.  Place on waxed paper, and then refrigerate for at least 1 hour.  After the peanut butter balls are well chilled, melt the candy coating, according to package instructions.  Then dip each ball into the coating and place back on waxed paper.  They are hardened and ready in about 2 minutes. This makes about 24 peanut butter balls.

Ingredients:

1 cup butterscotch chips

1/2 cup peanut butter

2 cups chow mein noodles

Melt the butterscotch chips and peanut butter in microwave for 1 minute, then stir.  Continue to microwave and stir in 15 second intervals, until there are no lumps from the chips.  Stir in chow mein noodles until well coated.  Drop by rounded tablespoons onto waxed paper.

Ingredients:

2 cups peanut butter

4 sticks butter

3 1/2 cups confectioner sugar

2 (8 oz) Hershey bars

Melt peanut butter and butter in microwave.  Stir in confectioners sugar.  Press into a jelly roll pan.  Melt the two Hershey bars in microwave and spread chocolate over the top of the peanut butter.  Allow to harden.  Cut into squares.

Ingredients:

1 stick butter

1 cup peanut butter

1 bag peanut butter chips

2 cups confectioners sugar

12 oz. Rice Chex cereal

Melt butter, peanut butter and peanut butter chips in microwave.  Stir in the cereal until well coated.  Divide into two gallon sized plastic bags, coat with confectioners sugar, in sealed bag.
