Happy Blueberry Popsicle Day!

I love this recipe because it’s healthy but it doesn’t taste healthy.  The greek yogurt gives these a richness that tricks the taste buds.

Ingredients:

8 oz. Lite Cool Whip

8 oz. Noosa Blueberry Greek Yogurt

1/4 tsp. Vanilla Flavoring

1 tsp. Honey

Fold together all of the ingredients in a mixing bowl.

Transfer the yogurt mixture to a freezer size plastic bag, zipping it closed at the top.

ziploc

Snip a bottom corner of the bag and fill each of the popsicle molds, tap down each one to insure that there are no air bubbles.

Place the sticks into the molds and pop them closed.  Then store in tray, in freezer, overnight.

In case you wondered, I bought my popsicle mold at Target, two years ago.  They don’t carry them in stores anymore but they are still available online…
